This recipe is from Jen Segal, found on her blog, Once Upon a Chef , one of my favorite cooking and recipe sites.
Jen's style of writing, how she explains recipes, shares cooking tips and encourages home cooks is so enjoyable.
Bonus! Her site is not bogged down with popup ads or even ads in general like most recipe and food blogs I have visited. It is clean, organized and pleasing to the eye.
She sets up the recipes with directions and beautiful pictures but also, always gives an option (with a little icon right at the top!) to jump directly to the more "traditional" recipe view with ingredients list and instructions listed out in number order without pictures.
I was introduced to Once Upon a Chef by a dear friend when we stayed with her one fall, she made this particular recipe one morning for breakfast. I was immediately hooked on the pancakes and the blog!
There are a few things I change when I make this Pumpkin Pancake recipe. The flour in order to make this recipe gluten free, the milk because I am dairy free (mostly) and a spice substitute.
On to the recipe!

I hope you try this recipe and enjoy it! I also hope you visit Once Upon a Chef for inspiration and new recipes!
If you do I'd love to know how you like the pancakes and the site! Please comment and let me know.
Hi! I'm Heidi
Founder and Author of the SOS Blog. A little bit about me. I love all the brews (coffee, tea, craft beer...) and wine and as much as I love all that I love cake. Crazy for someone who lived with an eating disorder for over 30 years huh?
