One of my favorite things about this healthy blueberry bread is it requires no yeast.
In 2020 yeast is hard to come by. Thanks to COVID, for whatever reason, all the yeast is gone! After the panic buying, it hasn’t returned to the shelves. At least that is the case here in Northern Virginia. As soon as it does I expect it will disappear again because we are all looking for it! You can use traditional white flour with this recipe, my version is a healthy blueberry lemon bread because of my choice of flours and low to no sugar. I experiment with different flours as I bake, when a recipe calls for regular white flour I will often use a combination of whole wheat flour and almond flour. Years ago, as I transformed my relationship with food, I started to stay away from all (or most) white flour whenever possible. My body’s response to white flour is not good. Before eliminating it I didn’t even know what “feeling good” felt like (if that makes sense). White flour is one of the top 3 things I changed on my journey with food and one I really don’t miss - because I feel so good! Consuming whole grains or brown wheat flour is a much better option. Almond flour, coconut flour or rice flour are even better options. Admittedly though, they do not always work well with certain baked goods. I have done a lot of experimenting through the years with some successes and some major flops.
It is fun trying, I enjoy baking so it’s a win either way for me! This particular recipe can be made with regular white flour, wheat flour, or a combination of flours. Here is my version of Springy Blueberry Lemon Bread from Pinch Of Yum! Some pretty significant changes from the original, such as no sugar, no white flour and no topping. Zesting a Lemon Without a Zester!
I wish I learned this years ago. Here is what you do.
Use a vegetable peeler, like the one you use for potatoes or cucumbers. Gently slice the skin of the lemon being careful not to go too deep (don’t get the white part!). Take these thin slices and dice them up really fine (really fine). That’s it! You now have lemon zest! Using a Lemon Zester is a time saver, you can grab one here, but in the meantime, now you know! This adds so much "fresh" to this recipe, I would not skip this part!
The original recipe from Pinch of Yum calls for a savory glaze using olive oil and salt. I opt out on that and have never tried it. To me, it's perfect without it. Another option may be a simple lemon glaze.
Since we are tweaking the original recipe to make this a healthy lemon loaf here are a few healthy substitutions for butter:
If you bake frequently like I do you may notice most recipes call for vanilla extract. When I made this quick bread for the first time I bet I checked the recipe 4 or 5 times to make sure I wasn't leaving it out! That is no mistake, this blueberry loaf does not require vanilla extract! A few reasons this lemon blueberry loaf is a healthy breakfast bread (that's when we usually eat it, for breakfast!): Blueberries - Are blueberries really healthy? Yes!
Lemons - are really like a super fruit!
I love healthy breakfast bread recipes and this one is our current go - to for a fresh, summer quick bread breakfast! My first try at this didn’t come out right. The top looked done but the inside was too mushy and runny and SUPER sweet. Next time I will cut the sweetener by a 1/4 cup and maybe reduce the blueberries by a little because they contributed to the extra liquids.

This sounds delicious. There is nothing like fresh lemon zest to make a recipe taste fresh. I've used coconut oil in place of butter often and it really works well. I'll have to give this bread a try
