We are wrapping up our last few weeks of life in Florida after a lifetime of growing up, getting married, living away for a few years, but then returning to live here for the last 21 years. In the whirlwind of selling, packing, planning and goodbyes I am still trying to participate in life, connect with friends and savor every moment before heading off for a brand new adventure. As you can imagine, if I am signed up to bring anything to a party or gathering, at this point it MUST be super easy! Searching for "super easy" is exactly how I discovered Pumpkin Pie Dip! This Pumpkin Pie Dip came to the rescue at my November "Cuisine Club" gathering. What is "Cuisine Club"? I should tell you all about it in another post. For someone who has had difficulty connecting with women in the past it has been a pleasant surprise to have this one night a month turn in to one of my most favorite nights. Our theme for November was "Fall Foods" or "Comfort Foods". Although I usually equate comfort foods with something warm, this Pumpkin Pie Dip is certainly a fall food and so yummy it was comforting to me! 4 ingredients only, well 3 if you don't use Pumpkin Pie Spice...but why would you do that? No cooking required! I found the recipe on Pinterest which led me to Hip2Save . A blog I recommend checking out! I don't know much about them yet but from first glance and a quick read about who they are I am in deep like (I won't say love yet, its too soon! but can tell I am falling fast!). Now on to the recipe - don't blink, you'll miss it! follow the links to conveniently order ingredients online! Ingredients: 1 can of Pumpkin Puree (15 oz) 1 tub of Cool Whip (8 oz. thawed) 1 package of Instant Vanilla Pudding (1.5 oz package) 1 teaspoon of Pumpkin Pie Spice - this is listed as optional but for me its a must, so delicious! and smells so good! Don't have any? Don't worry you can make your own very easily... Bonus - in addition to being able to purchase online, or at almost any grocery store, all of these items can also be purchased at Aldi a favorite place of mine, I save so much money there! All items with the exception of actual brand Cool Whip...which my daughter insists we buy. Mix it all up, I used a stand mixer but I am sure whisking by hand or an electric hand mixer would work just as well. Chill until ready to serve. Serve with dipping choices such as vanilla wafers, ginger snaps (my personal favorite), graham crackers, waffle cone pieces...whatever you like! If you happen to purchase cook and serve pudding by accident it works as well - I know because that's exactly what I did. Mixed it in and it was just fine. You will be the hit of the party with this one!
