Have you ever attempted making bread? Not banana bread or pumpkin bread which are more like cakes (and I love them!). I mean real bread that you can have with a meal, use for sandwiches, dip in a soup or stew?
I have tried many times. Some successes, many failures.
It was no surprise to me as easy as this recipe is I did have some mishaps the first couple times I tried it. I am sharing those with you here to save you the time, just in case you are like me, someone who loves to bake but no professional.

Did I mention this is healthy? Yes! Even though you will see I used a full gluten dough this recipe only has 4 ingredients and as it sits in the refrigerator (for up to two weeks waiting for you to use it!) the more sour it becomes, turning into more of a sourdough .
Although I would love to try this recipe using a sourdough starter, if you have an easy sourdough starter or sourdough tips please share in the comments! I am interested.

After my mishaps, I learned this recipe is SUPER EASY just like Sarah says it is and it disappeared so quickly I couldn't even get a picture of the beautiful bread I made. Maybe next time!

We are wrapping up our last few weeks of life in Florida after a lifetime of growing up, getting married, living away for a few years, but then returning to live here for the last 21 years. In the whirlwind of selling, packing, planning and goodbyes I am still trying to participate in life, connect with friends and savor every moment before heading off for a brand new adventure.
As you can imagine, if I am signed up to bring anything to a party or gathering, at this point it MUST be super easy! Searching for "super easy" is exactly how I discovered Pumpkin Pie Dip!
This Pumpkin Pie Dip came to the rescue at my November "Cuisine Club" gathering. What is "Cuisine Club"? I should tell you all about it in another post. For someone who has had difficulty connecting with women in the past it has been a pleasant surprise to have this one night a month turn in to one of my most favorite nights.
Our theme for November was "Fall Foods" or "Comfort Foods". Although I usually equate comfort foods with something warm, this Pumpkin Pie Dip is certainly a fall food and so yummy it was comforting to me!
4 ingredients only, well 3 if you don't use Pumpkin Pie Spice...but why would you do that? No cooking required!
I found the recipe on Pinterest which led me to Hip2Save . A blog I recommend checking out! I don't know much about them yet but from first glance and a quick read about who they are I am in deep like (I won't say love yet, its too soon! but can tell I am falling fast!).
Now on to the recipe - don't blink, you'll miss it!

1 can of Pumpkin Puree (15 oz)
1 tub of Cool Whip (8 oz. thawed)
1 package of Instant Vanilla Pudding (1.5 oz package)
1 teaspoon of Pumpkin Pie Spice - this is listed as optional
but for me its a must, so delicious! and smells so good!
Don't have any? Don't worry you can make your own very easily...
Bonus - in addition to being able to purchase online, or at almost any grocery store, all of these items can also be purchased at Aldi a favorite place of mine, I save so much money there! All items with the exception of actual brand Cool Whip...which my daughter insists we buy.
Mix it all up, I used a stand mixer but I am sure whisking by hand or an electric hand mixer would work just as well. Chill until ready to serve.
Serve with dipping choices such as vanilla wafers, ginger snaps (my personal favorite), graham crackers, waffle cone pieces...whatever you like!
If you happen to purchase cook and serve pudding by accident it works as well - I know because that's exactly what I did. Mixed it in and it was just fine.
You will be the hit of the party with this one!

Jen's style of writing, how she explains recipes, shares cooking tips and encourages home cooks is so enjoyable.
Bonus! Her site is not bogged down with popup ads or even ads in general like most recipe and food blogs I have visited. It is clean, organized and pleasing to the eye.
She sets up the recipes with directions and beautiful pictures but also, always gives an option (with a little icon right at the top!) to jump directly to the more "traditional" recipe view with ingredients list and instructions listed out in number order without pictures.
I was introduced to Once Upon a Chef by a dear friend when we stayed with her one fall, she made this particular recipe one morning for breakfast. I was immediately hooked on the pancakes and the blog!
There are a few things I change when I make this Pumpkin Pancake recipe. The flour in order to make this recipe gluten free, the milk because I am dairy free (mostly) and a spice substitute.

I love recipe and cooking blogs but one thing I don't like is having to scroll through all the paragraphs and pictures to get to the actual recipe.
The bare bones: ingredients list & instructions are what I am really after. So I will get right to it.

Fast & Easy Steak Salad

Total Time: 30 min "ish"
If you want to get a little fancier and have more time or if you remember (I am always forgetting to prep the meat), at least an hour before cooking (or longer or shorter I have done a 30 minute marinade before) open up the steak and put it in a zip lock bag with olive oil and seasonings such as garlic powder, salt, pepper, Italian seasonings....any seasoning you like that is in your cabinet and goes with red meat. Remember I am not a professional cook this is a slap it together kind of deal and you can do it too!
Heat up cast iron skillet or frying pan to cook the steak, I use cast iron. Preheat the pan on medium heat. As that heats up (if you haven't prepared the steak yet as stated above and really its FINE if you haven't. It will still be good.) open up the steak and have it ready on the side to put in the pan when it is ready.
When the pan is ready (how do you know? I usually just hoover my hand over the pan and if I can feel the warmth then I know, I am sure there is a much more technical, professional way to know but again, just your average mom here) put the steak in the pan, it should sizzle a bit, I sprinkle with salt and pepper as its cooking. Cook for about 3-4 minutes then turn the steak over, sprinkle this side with salt and pepper now. Cook for about 3-4 minutes.
**cooking time will vary depending on how big your steak is. I usually get a steak that is about 1 pound in total weight. If you like your steak very well done you may want to cook longer. One of the great things abut cooking steak is, unlike chicken, you don't have to worry too much about under cooking it!**
When the steak is finished cooking, move it to a platter or cutting board to rest a few minutes before slicing into strips.
If you have children old enough to help in the kitchen, making the salad can be their job for sure! Have them start chopping and assembling a salad big enough for your entire family to have dinner portion sizes!
If you don't have children old enough to help then prepare your salad when it works for you. Before, during or after the steak is cooked.
Our girls like to keep all the chopped veggies separate, with the exception of purple cabbage? We have a big bowl of the Romain Lettuce and all the other veggies in little bowls on the side. Salad bar style (high maintenance girls...my fault, I know.)
That's it, slicing the steak into strips is easy, it is just exactly that slice into strips whatever size you want. I prefer small strips to make it easier to cut up in my salad. If you would rather cut it all up into bite size pieces then do that! It's your kitchen, your food, your family! You make the rules here.
